I love lemon recipes, especially during the summer. There’s just something so refreshing about anything lemon. One of my favorite lemon treats is the Starbuck’s Iced Lemon Pound Cake. This lemon loaf recipe is a close to their’s AND I don’t have to drive to get it! It reminds me of a nice cool glass of lemonade on a hot summer day.
You can use as much or as little lemon zest/juice as you like. I prefer a lemonier flavor and did add a bit more of the zest than the recipe calls for.
This recipe is very quick to pull together. It takes less than an hour to be able to indulge in a delicious, decadent treat.
Tips
- Don’t skip the lemon zest as it adds most of the lemon flavor.
- You can add fresh berries, chopped nuts or poppy seeds to kick it up a notch. Just gently fold in the additions once the batter has been thoroughly mixed together.
- Double the recipe and share a loaf with a friend. You’ll make their day brighter.
Tools You May Need
- Large mixing bowl
- Parchment paper
- Loaf pan
- Measuring cups, spoons or scale
- Spatula for mixing
- Zester/grater
Ingredients Needed
- All-purpose flour
- Salt – I prefer Redman’s
- Sugar
- 1 Lemon
- Olive Oil
- Butter
- Vanilla extract
- Baking powder
- Milk (I used whole milk)
- 3 Eggs
- Powdered sugar
- Grate the zest of 1 lemon. I like this grater. https://amzn.to/4bFvwMw
- Mix the lemon zest and sugar until well combined.
3. Add butter and oil and mix well. (Use room temperature butter or melt slightly in the microwave).
4. Add eggs, 1 by 1, and mix each until the egg disappears completely.
5. Add the lemon juice and vanilla extract.
6. Add flour, baking powder and salt through a sieve. Mix until combined.
7. Add milk and mix until well combined, making sure to scrape down the bowl.
8. Transfer to a lined loaf pan. Bake at 320 F (160 C) for 40-50 minutes.
Once done, allow to cool in the pan, then remove to a cooling rack.
Frosting
- 120g powdered sugar
- 10 ml lemon juice
- 10 ml milk
Add the powdered sugar, lemon juice and milk to a bowl and beat together until smooth. Pour over the cake.

- 200 g Sugar (1 cup)
- 5 g Lemon zest (1/2 tbsp)
- 110 g Butter (room temperature) (1/2 cup)
- 30 ml Olive oil (2 tbsp)
- 3 Eggs
- 30 ml Lemon Juice (2 tbsp)
- 200 g AP Flour (1 1/4 cup)
- 5 g Vanilla extract (1 tsp)
- 5 g Baking powder (1 tsp)
- 3 g Salt (1/2 tsp)
- 120 ml Milk (1/2 cup)
Frosting
- 120 g Powdered sugar (1 cup)
- 10 ml Lemon juice (2 tsp)
- 10 ml Milk (2 tsp)
Instructions
Cake
- Preheat over to 320F( 160C).
- Grate zest of 1 lemon.
- Mix lemon zest and sugar until well combined.
- Add butter and oil and mix well.
- Add eggs, 1 by 1, and mix until the egg disappears completely.
- Add lemon juice.
- Add flour, baking powder and salt through a sieve. Mix until combined.
- Add milk and mix until well combined making sure to scrape down the bowl.
- 8. Transfer to a loaf pan lined with parchment paper.
- Bake at 320F (160C) for 40-50 minutes.Remove from oven and allow to cool in pan, then move to a cooling rack.
Icing
- Add the powdered sugar, lemon juice and milk to a bowl.Beat together until smooth, pour over the cake.Enjoy!
